I'm interested in posting a "Let's Play" topic - where I go through a game, posting screenshots/videos/updates of my progress and people can discuss it or whatever. What subforum would that go in?

Let's Play threads can go in Forum Games. They're not necessarily interactive, but they are indeed fun to follow, and don't really belong in any other forum either.
